Pork Medallions with Mango Salsa

Ingredients
1-1½ lb Pork tenderloin

1 tbsp Amazing Taste for Pork

1 Mango, peeled, seeded and chopped

½ Red bell pepper, chopped

¼ cup Finely chopped red onion

2 tbsp Chopped fresh cilantro or parsley

½ tsp Grated lime peel

2 tbsp Fresh lime juice

2 tbsp Olive oil


 
Directions
Cut pork into 1½ inch thick slices. Flatten to 1 inch thick, and coat with Amazing Taste. In medium bowl, combine mango, bell pepper, onion and cilantro. In small bowl, combine lime peel, lime juice and olive oil. Toss half of the lime mixture gently into mango mixture and set aside. Cook pork medallions in pan with 1 tbsp oil, over medium heat, baste with remaining lime mixture. Cook until pork reaches a minimum internal temperature of 145°F., about 5 minutes per side. Serve with mango salsa
